So our vegan Bolognese stays largely true to tradition – with a base of soffritto (sautéed onions, garlic and carrots) and finely chopped fresh Italian tomatoes. Then we boldly veer off-piste, using the magic of pea protein to create a sauce that’s bursting with flavour and the same satisfying texture as you’d expect from Bologna’s original.
