“What on earth made you consider taking on a tomato passata when there are so may already on the market? What is so special about this one?!” I have been asked this many times by clients and I enjoy being able to give them my answer! Firstly, they are no ordinary tomatoes as they come from a relatively undiscovered region of Molise which has a very rich and fertile soil. These native tomatoes are hand-picked so that selection of only ripe tomatoes is guaranteed and ensures that the best quality gets used in the final product. In this region the sun is strong in June and July and this helps to concentrate the sugars in this variety and allows for several harvests between August & September. The yield is low as the hilly landscape is not workable with heavy machinery and, due to the ‘terroir’, the quality of the fruit is very high. No chemical fertilizers are used and no irrigation (which can plump the fruits but dilute the flavour). The respect of strict procedures for the cultivation of the vines makes this product naturally sweet, low in acidity, high in Lycopene and antioxidant qualities.
Once harvested, the tomato is cooked using thermic steam to maintain the organoleptic qualities of the fruit. There is no need for added sugar to disguise the acidity of unripe fruit – simply well-grown, carefully harvested, meticulously prepared real tomato flavour bursting from the jar. Dense, naturally sweet, with an intense red colour and none of the ‘cooked’ flavour of the many cheaper versions to be found.
