This little jar of anchovies is a must have for every foodie kitchen.
Now, not all anchovies are equal and there is an art to producing a Giribizzi anchovy. Ours have been very carefully selected to achieve a meaty and soft texture, while not being too salty. Exquisite and delicate, they are very sought after by anchovy enthusiasts, who recognise that they are completely different to the cheaper versions now found in most supermarkets. These flavoursome fish are individually chosen according to very stringent criteria, from a fishing village in Sicily. They then travel to Piemonte for final processing.
Once they reach Piemonte they are carefully selected again, meticulously cleaned and filleted and then jarred by hand – to preserve their flesh – in olive oil. A lot of effort is put into finding the right balance of salt for every batch produced and a lot of pride taken to ensure that the final product is perfect.
SERVING SUGGESTIONS
A wonderful ingredient for many dishes - adds umami to pasta sauces and of course vital for bagna cauda.
