PRODUCT INFORMATION

This is a traditional Tuscan appetiser which I have eaten since I was a child. Of course, the best in the world were those made by my mother for our family and friends! However, I must admit, the one chosen for Giribizzi is a pretty close second and we are deeply proud of how good it is! What are Crostini Toscani? Essentially, chicken pate served on “little toasts”. Crostini are thin slices of bread - preferably Tuscan, which is unsalted - lightly toasted or grilled until crispy. The livers are sauteed with onions, capers, sage, wine, and the addition of Vinsanto – a sweet Tuscan wine usually used during the Sunday Mass by the priest (no wonder he is always so jolly). I would recommend warming it up, ever so gently, before spreading it on the crostino to allow the flavours to explode in your mouth. Interesting to note is that each and every village in Tuscany will have their own secret way to prepare the crostini and, of course, they all claim to have the best!
