I was intent on finding a pasta which reflected the true Italian pasta tradition, while also being unique and differentiating from what is so easily found on the shelves of the supermarkets. Our Giribizzi pastas are certainly this and have the added benefit of being suitable for people following a wheat or gluten free diet. Many gluten-free pastas do not deliver on flavour and are difficult to cook without disintegration. This does not need to be the case and we are proud to prove that pasta can be made with wheat alternatives and still look and taste amazing! Giribizzi pasta is made in a traditional way while using a unique mixture of buckwheat and white corn flour. It is made in the Alps surrounding the Lombardy region, using strictly Italian grown grains and water from the mountains.
The flour is worked by hand, creating curls of pasta extruded through bronze dies. It is then dried slowly, using a constant low temperature. The use of bronze plates gives the pasta a superior texture (as well as a thinner, opaque surface) which helps to better capture and hold any sauce it is served with. It is surprising what a big difference this makes to a pasta dish and once experienced, you will understand why good pasta is so important to Italians.
