Surrounded by beautiful scenery of Monte Bianco and Monte Rosa as a backdrop the nomadic hives are placed at 2,270m in the Alps of Val d’Aosta. This is a rare raw monofloral honey with limited production, difficult to produce consistently due to climate conditions which follows high altitude. Once harvested - one of the most ancient human activity - the honeycombs are first ”uncapped” by hand using a warmed knife and put into an extractor which spins the honey out of the cells. Then cold filtered using a fine cloth mesh to separate the honey from impurities like beeswax. It’s then left to decant and mature for up to 3 weeks before be ready for the most refined.
