Agraz-Verjus

This wine was traditionally used in the cuisine of the Middle Ages. It is obtained from a green, under-ripe harvest of highly acid grapes in August and is a great condiment for many dishes such as game, foie gras and oily fish as it reduces fattiness.

Alternatively, it can be used to balance the sweetness of other ingredients, such as onions, butter, etc.
